forty bags of dad's dinners through the Geryon vacuum sealer so far

Vacuum Sealers

Batch cooking for my dad is what pushed me into buying one, since he eats a portion of something and forgets the rest exists.

Two weeks on the counter now. The E2900-MS-002 is the Geryon vacuum sealer, the flat plastic slab that costs less than a tank of fuel, well below an Anova chamber machine and under most Mueller units. Kit gets tested at ours before it goes to his flat. Suction is stronger than the money suggests, a bag of chicken thighs pulls down tight enough to show the shape of every piece through the plastic, and a cycle runs ten to fifteen seconds a bag on automatic, so eight portions takes under three minutes includng the loading and cutting.

Roughly forty bags in and the seal has held on every one, with nothing coming loose in the freezer. The seal line is even along its whole length with no thin patches at the edges, which is where cheap machines usually give themselves away.

Moist food needs technique rather than a better vacuum sealer, because anything with juice in it wants an hour flat in the freezer first, otherwise the pump drags liquid into the channel and the seal goes cloudy and weak. Every external sealer I have owned does that, this one included.

Bag cost is the running expense nobody mentions when they quote you the price of the machine. It takes any standard embossed roll rather than tying you to one brand, and cutting your own lengths wastes far less than pre cut bags, which is where FoodSaver gets its money back over three or four years.

Flat and light enough to carry in one hand, which is why it stays out instead of living in a cupbord, and it stands upright behind the kettle where small hands cannot reach. Everything at ours lives above waist height, which rules out half the kit I would otherwise buy.

Plastic and honest about being plastic, hinged lid, a catch at each side, a gasket that lifts out for a wipe. Nothing about it would survive a drop onto tile, though nothing has cracked or flexed in normal use either.

Longevity I cannot speak to yet, and a 4.3 average across more than thirty thousand reviews is a lot of people, though it tells you little about year three. Pumps at this end of the market are usually the first thing to tire, and the replacement you get sent is never the one you originally picked.

A year or two into a cheap sealer like this, is it the pump that goes first or the heat strip?
