Today's Wagashi is made of Japanese Pumpkin Yokan with a white Nerikiri dough rabbit. The rabbit shaped cutter is from [Majimaya ](https://majimaya.jp/shopdetail/000000011097/0000001139/page8/order/)

Recipe:

* 1/4 Japanese Pumpkin, cored and peeled.
* 200ml water
* 4g powdered agar
* 30 granulated sugar
* 10g nerikiri dough

Pour 200ml water into a medium sauce pan. Sprinkle agar powder over the surface to hydrate. Add sugar.

Cut pumpkin into small pieces. Place in heat resistant bowl and cover with kitchen wrap. Microwave in 30 second bursts until tender. Mash, and strain through a coarse sieve. Set aside.

Heat agar liquid, stirring with a spatula to prevent clumping. Bring to a boil then reduce heat. Check for gel. Add pumpkin puree and stir until evenly mixed. Remove from heat.

Pour hot mixture into moistened pan. I used a [half-moon shaped yokan pan](https://majimaya.jp/shopdetail/000000005706/0000000855/page1/order/). Allow to set (approx. 1 hour). Remove from mold, cut into slices.

Roll out a small amount of Nerikiri dough, dust with potato starch in needed. Cut rabbit shape. Place the rabbit on the half moon.

You can improvise by pouring the yokan liquid into a flat pan, then cutting the yokan with a circle cookie cutter. Cut it in half for a half moon shape.

This pumpkin yokan is also delicious on it's own.
