Left Handed Custom Heirloom Over Under?

HELP!! I hope this is allowed.
I want to buy an awesome over under upland gun for my husband’s 30th birthday. I wanted to go with a Beretta 686 Silver Pigeon Field 28” 12 gauge, but he is left handed. Those are impossible to find LH or their custom from the factory and $5,000+. My budget is $3,000. Any other heirloom over unders I’m overlooking for LH shooters? Stock swaps are fine, I just don’t know anything about the process! I’ll also be engraving his father/grandfather’s signatures on the stock, so advice for that is welcome too!

UPDATE: I came across an insane sale today and it seemed like fate. I looked closely at all the options people had suggested here and selected the Browning Citori C 825 Field 12 gauge 28”. The gunsmith there explained the neutrality of the cast and said a fitting after the surprise will dial it in for him. Got a great deal and walked out the door spending $2,300. Don’t tell me I picked the wrong one, just tell me I did a good job 🥹
