60 card EDH for beginners?

Does anyone have any experience with doing less-than-100 card decks for beginners?

Long story short my students (14-15 year olds) want to learn EDH.

Thinking of putting together some fairly basic mono-color decks. Something straight forward without too much going on.

100 cards will be too unwieldy in terms of shuffling, so I'm aiming for 40-60 cards, and would love to get some input.

Also, if anyone have decklists that too would be welcome 😄
