How can I prevent CK3 updates from breaking my modded playset?

I have a heavily modded CK3 playset (AGOT + Legacy of Valyria and multiple submods) that is currently working perfectly. My problem is that CK3 updates frequently, and game updates can break the mod setup.

Is there a reliable way to lock/freeze my current CK3 game version and keep playing it after a new update releases? I’m not asking about preventing Workshop mods from updating — I specifically want to prevent the base game from updating or preserve the current game version.

I've heard that some people use a mod or some kind of workaround/trick to prevent this.

So what method do you guys use for this?
