Advice with wood trim and built in shelving.

I have an older house we've been slowly making updates to. The first floor has this chunky wood throughout the living room, dining room and kitchen. In the kitchen the previous owners painted it white. It's used on the fireplace, all floor and ceiling trim, around windows and doors.
In the living room and dining room I'm going back and forth on how i feel about it. I would NOT paint it, but I've been trying to decide if i replace it with thinner trim or change the stain.
Sometimes i feel like the thickness of the wood feels too dated and something thinner would help the room a bit. My concern is that it would be a pretty intense remodel even for just the 2 rooms.
I've also debated getting quotes on just re-finishing or stripping and staining a lighter color. I assume that would also be a little intense, but avoids the painting, plaster patching, etc..
Would love any thoughts or suggestions.
