Trying to decided between 2 jobs ?

I’m trying to decide between two different jobs and I’d like to get some outside perspectives, especially from people who have had to make a similar choice.

Job 1 — Under-the-table job/possible business partners/would learn a lot of different skills, hvac, carpentry, electrical, plumbing
Pros:
Fewer hours and Paid by Day
More variety in different kind of work( Im ADD and like change)
Opportunity to gain experience and learn different skills
Cons:
No formal protections/benefits
Income isn’t officially recorded
Less stability, weather happens

Job 2 — W-2 job
Pros:
More stable
Benefits
Worker protections
401(k)

Cons:
Paid by Hour/40 hours a week
More of a red flag but offered the job over a minute convo on the phone wanting me to start tomorow

For people who have been in a similar situation, what factors would you personally consider before making this decision? Is there anything I might be overlooking?
I’m not necessarily looking for someone to tell me which one to choose — I’d just like to hear how other people would think through this. I have ADD pretty bad and have trouble making decisions. Also going through a lot in life right now , out of work . Also both of these jobs pay about the same. But I feel like there’s definitely faster possibility for more pay with Job 1
