Almost a month after Google announced hotel booking in AI Mode, it is still not fully rolled out
On the 27th of August Google AI Mode got a new feature to book hotels end to end. The flow: AI Mode pulls up matching hotels if hotel flow is triggered, the traveler picks a room from an eligible partner (currently, only Booking.com, Expedia, Hotels.com, Priceline, Trip.com, plus a few hotel chains - Hilton, Choice and Wyndham), reviews the terms, and pays with Google Pay without ever leaving Google. The booking partner stays the merchant of record and handles customer service, so Google positions itself as the interface, not the seller.

What I observed after a month - the hotel booking feature is either still in testing mode and not fully rolled out in the US, or completely gone.
