The trick to juicier air fryer meatballs was changing how I shaped them
I used to pack my meatballs pretty firmly because I thought a tight shape would help them hold together. They stayed together, but the texture was often much denser than I wanted.
Now I mix the ingredients just until everything is combined, then shape the meatballs with a light touch. I want them compact enough to hold their shape but not squeezed into hard little balls.
I also make them as evenly sized as possible. That matters more than I realized. If one meatball is twice the size of another, they're not going to finish at the same time, even if they're sitting next to each other.
Before cooking, I make a shallow indentation with my thumb on the underside of each one. Nothing dramatic, just enough to keep them from rolling around and to give them a more stable base in the basket.
I leave a little space between them and turn them once if the shape calls for it. Near the end, I check the largest one with an instant-read thermometer rather than cutting every meatball open.
The biggest improvement wasn't the temperature.
Gentle mixing + consistent sizing + loose shaping gave me much more tender meatballs.
If your air-fryer meatballs keep coming out dense, the problem might be happening before they ever reach the basket.
