"metagaming" monster statblick knowledge and summoning spells

How is / did the seemingly "common sense knowledge" that players should not read or at least act on "metagame" knowledge of creature statblocks ever rectified with the existence of spells that allow players to summon and control various arbitrary creatures?

This was a huge perceptual mismatch in old school D&D, but seems just as much a bugbear is Pathfinder 2E, despite(and in seeming conflict with) its explicit "knowledge skill" uses. I'm sure there are other cases where int creates such (perceived) conflict, but are there games that resolve this conflict, and if so how?
