Going to Canada for a week late October

Planning on splitting trip between Montreal and Quebec.

What are the absolute cant misses and some side quests if time allows?

Interests are photography, architecture, breweries, museums, just wandering lol

Also for my fellow vegans, how veg friendly is Canada?
