DIY adventure day in Ubud

I want to do an adventure day in Ubud, and want to see waterfalls and rice, terraces and other cool nature. I don’t want to book a group tour because I feel like they’re overly tourist focused and I want an authentic and adventurous experience. I would love for a couple of the waterfalls to include a hike and for the rice terraces not to just feel like a tourist exhibit.

Im thinking of some of these sights:
Draft: Kanto Lampo > Tibumana > Tukad Cepung > lunch > Mupu > Tegallalang.

What order and timing would you use, and what are your absolute musts that I might be missing?
