Beet varieties for people who hate beets?

I don't like beets, as a general rule. I've had them exactly once where they were delicious and didn't taste like sweet and sour dirt, lol. BUT, I always try them when presented, and as a(n ex) chef, and now an accomplished gardener, I can sow pretty much any variety I want, which might be the silver bullet to enjoyment.

So- what beet varieties would you recommend for someone who hates "normal" beets?
