The best f***ing bolognese you've ever had (feeds 2):
*250g minced meat (1/2 1/2, 2/3 1/3 or 3/4 1/4 beef-pork ratio, for varied degrees of lean/fat)
*Tomato paste
*Small onion
*Garlic
*Paprika (add a pinch of hot paprika/chili powder for added spiciness)
*Italian herbs (Oregano, Basil, Marjoram, Thyme, Rosemary, Sage, Parsley)
*Chicken bouillon cube or chicken soup mix (that's right, I said chicken)
Oil up a pan, dice onion, crush garlic and brown for a minute or two. Add meat, cook until browned, add tomato paste, add all other ingredients.
Takes about 8 minutes to cook and tastes awesome.
No chopped tomatoes/ passata? Whack that in, a pinch of sugar, splash of worcester sauce, pinch of cayenne, pinch of cinnamon if you have it, change the cook tike from 8 minutes to 3 hours, finish with fresh basil, then you got yourself a killer ragu.
3 hours? Ain't no one got time for that.
Well, however long you got really. I think 1 hour is minimum for deliciousness.
Pro tip: add a good amount of red wine and let it reduce on the oven. Takes about 1h to 2h but is totally worth it.
LSD... it makes anything taste good

Order out.
I have a big, Hispanic (Mexican) family. I can tell you right now what makes real Mexican food so fucking delicious...
Lard or bacon fat.
Oh, how we love lard and bacon grease. In beans, to brown meats, to deep fry puff tacos, in the masa for our tortillas, to make fideo, in corn breads (or any god damned bread)... these things make taste buds happy.
What time should I arrive for dinner?
Any time, mang. I feed people whenever they come over.
On Sundays my family would usually make what we call a 'Margot tea' (named for my mother's friend who would always serve this kind of meal) which consists of a large spread of cold meats, baguette, cheeseboard, antipasti, potato salad, coleslaw, cold pasta etc.
Everyone just helps themselves to what they'd like and since you don't have to worry about anything going cold, you can sit at the table for ages refilling your plate like a Roman.
Now why would I say it here, it's a secret.
It's a secret.
