Help me pick my 2 keepers?
We do not do Rotisserie, our league goes by overall points. Here are my choices, their points from last year and their ESPN projected points for this year:

Victor Martinez - 513.5 - 405 - Ranked #1 Batter overall
Edwin Encarnacion - 384.5 - 445 - Ranked #21 Batter overall
Madison Bumgarner - 580 - 603 - Ranked #11 Starting Pitcher
(Note: Pitchers in our league overall gets more points than batters, that's why Bumgarner has more points than the other two. )

I think this is fairly easy for you:
EE and Bumgarner
VMart had a career year last year, has been dealing with an injury and, in my opinion, is unlikely to replicate last season.
EE is the best player in the deal and, based on your projections, pitching scores a ton more than hitters.
