Not sure what's my next objective, need guidance

Never having played any of the Souls games before, I think I've made it pretty far without looking for help but I simply don't know where to go next. About 45 hours in, I'm level 70 and I've got four boss battles open; Darkbeast Paarl, Martyr Logarius, the One Reborn & what I believe to be Ebrietas. I've explored most of the areas I've unlocked but this game is so overwhelming; I accidentally missed Eileen the Crows story, Arianna somehow died since I last visited her so I'm not sure how I'm supposed to get a third umbilical cord and I can no longer travel to Hypogean Gaol, help a distressed hunter out

All of those bosses are optional except for One Reborn. Beat him to progress.

There are 4 Cords in the game, so you can miss one. I dont' think the other 3 can be missed (as in unobtainable) though, so you should be fine.

One of those 4 bosses is a story progression boss.

If you want to progress the story than you want to take on The One Reborn. He is a story progression boss. The others are optional, and I think if you haven't beaten the Darkbeast yet that boss may no longer be available to you because of where you are in the story .... don't quote me on that though
