My wife and I are planning on going to a ren faire this summer and I am investigating options for my garb. I really like this doublet, but I was hoping to get some help on what kind of pants and accessories to wear with it. Any help would be appreciated.

I bought my second outfit from Zootzu. Its light and breathable so you don't feel like your going to die if your Renfaire is during the summer. They also make capes and stuff for cold weather as well.
Depending on how adventurous you are tights are used in a lot of "Nobility" costumes which that doublet would definitely fit into. http://tgertoggs.com/ and http://seamlyne.com/ are the 2 places that I've gotten several pair from and they are used pretty extensively in KCRF.
Add in a nice Leather belt and some pouches, a shirt for under the doublet and you have a great start on a costume!
From there its a matter of finding out what kind of footware you want. Boots/shoes.

Honestly a pair of light cotton sleep pants work well with just about everything, if you wear a pair with the ends tucked into your boots it'll give them the right level of poof
A long leather belt is a must And any sort of brown trousers. My hubby wears scrub pant with his armor and it looks pretty good
I'm the wife of OP. Would different types of fabric look okay with this doublet? We have seen several nice pants for sale but they are all made of cotton or velvet and I'm not sure if they would look odd with the shiny material that the top has.
cotton or linen pants would look the best in my opinion. I agree that the velvet pants would kinda weird with that style. A good rule of thumb, matte goes with anything
A pair of brown scrub pants would work great, you may also want to get an off white 'pirate' shirt (with the puffy sleeves). Tight leather pants would also look good, kinda like a noble duelist look.. the velvet I think would look strange. Something matte would look best. Dark cream/browns.
