Could we plot out the entire Mario Kart world?

After seeing u/UberAndrew's post from earlier today and watching GameXplain's Super Bell Subway analysis, I can't stop thinking about the Mario Kart world. We now have maps of whatever main continent houses Mario Kart 8's courses courtesy of Super Bell Subway, and it's safe to assume from the very existence of Sunshine Airport that not all of the courses are located on the main continent. The question I pose is, can we use this information to map out the entire Mario Kart world and, perhaps more ambitiously, could we connect all of these courses if someone were to rip the game's files?

EDIT: I'd actually really like to see this become a full-fledged project. If we could get a team of creative Karters together to make this a reality, it would be outstanding. Granted, I myself have very little experience in manipulating 3D models (the closest I've ever gotten being some very basic texture edits in BrawlBox), but I'd be up for supervising the project and keeping everything organized. Oh, and if we ever do any videos, I could even do some Mario Kart remixes to help spice them up.
