Nice recipe. Did you use a potato to take the photo?

Potatos aren't allowed on SCD.

Not sure if this is a joke but there are no potatoes in the recipe so youre good to go :) The "potato" was in reference to the crummy potato quality cell pic.

I'm gonna go ahead and blame my lack of caffeine on my lack of ability to sense jokes. Yeah, that must be it.

So here's the recipe, I started from this recipe and made some changes. I will post my changes to the recipe to my comments but the directions are the same as with the initial recipe

Ingredients

1 head of cauliflower riced

5 large eggs

2 tbsp coconut flour

2 tsp flax meal

Juice of 1 large lime

cilantro to taste

salt and pepper to taste

The rest was pretty simple. I chopped up some cilantro, red onion, tomato, and pickled jalapeno and pan fried some scrod(although any whitefish will do), squeezed a good bit of lime over top and had a ball!

Overall I'd say the tortillas held together really well. Not as malleable as a real masa taco but I'll definitely make these again.

That looks very interesting and tasty. Cauli fried "rice" is now one of my favorites but I wouldn't have believed it would hold together like this in a tortilla but given your photographic evidence, I'll have o give it a shot this Sunday (my cooking day for the week). Thanks for sharing!

PS: I also need to look up if coconut flour and flax meal are ok in SCD?

Yea cauliflower fried rice is awesome! as far as I can tell limited amounts of coconut flour and flax meal are ok on the slow carb diet. I have used them for the last 10 months with no negative effects to my weight loss. granted I only use some really limited quantities for things like fritters. And I also only use them once or twice a month but definitely take the Tim Ferris approach and experiment!
