I want to learn to cook professionally, but can't afford the Cordon Bleu. Where can I take intense cooking lessons without breaking the bank?

I want to master the art of cooking and am looking for a full-year course. Any ideas where to start? The Austin Community College program looks like a joke at $12k and the Cordon Bleu is too expensive at $20k. Any ideas?
