Beef Wellington sans Pastry
Hi r/food, sorry if this is on the wrong sub, but was looking for some recipe advice.
I'm on a ketogenic (very few carbs/avoiding carb rich foods) diet, and have been having a hankering for Beef Wellington. However, the pastry required to seal the whole thing in is a obvious nono, so I've been thinking about possible alternatives.
The idea that occured to me was using bacon instead of pastry, which a) would be delicious and b) would mean the pate/garlic wouldn't just slide off the meat as it cooked.
Would this be viable? I was considering using twine to tie on the bacon, in which case it SHOULD keep everything sealed in, so long as the placement of bacon is even.
Proposed recipe:
1) Take a beef roast. Season generously with salt/pepper, and brown on all sides in a pan on high heat, to lock in the juices.
2) Take browned beef roast out of pan and prepare roasting tin, with a layer of bacon at bottom to form base.
3) Spread pate and minced garlic on the beef roast, making sure to be generous.
4) Cover roast with bacon, ensuring even coverage, and securing with twine.
5) Dress with a thin sheen of oil, to ensure the bacon roasts nicely
6) Put in the oven! It should be pre-heated to 200*C, and the roast should then be cooked for 14 minutes + 14 minutes per 500g of roast. (This is for a rare roast, add time for medium or well done)
7) (Theoretically) Enjoy Beef Wellington!
Again, apologies if this isn't the right place, and I promise pictures when I do it if the recipe proves viable!
Thanks in advance.
