Where did you open your 529 and/or Coverdell ESA? What investments?

I have a newborn and want to open a Coverdell ESA and a 529 for college savings. I'm wondering what other parents have done this, what institution you opened your account(s) with, and then what investments you've picked. I'm leaning towards opening with eTrade and then using some kind of target date mutual fund. Any advice is appreciated (although I already know the nuances of the 529 and Coverdell itself and the pros/cons. Now I need to actually open an account and get the money invested...)
