How I avoided throwing away ripe bananas
We usually serve fresh bananas as the 'second' dessert for our friends when they come over (Indian tradition that we still continue). We bought about 5 lbs of bananas but it remained untouched this time. Even after eating 2 bananas a day, I was still left with 3 lbs of the stuff. After wathcing it go over-ripe in just a few days, I did not have the heart to throw it all out. Just before it started to smell, I had a light bulb go on and used a few other fruits to make a south Indian delicacy - Panchamirtham (Five nectars)
Recipe:
Ripe bananas - 3 lbs
Red apple cut into very small pieces (size of pea) - 1
Peach - 1
Nectarine - 1
Raisins - 1/8 cup
Chopped nuts - 1/4 cup; I prefer almonds and cashew nut.
edible camphor - 1 pinch
brown sugar - 1/4 cup
white sugar - 1/4 cup
Mash the bananas with your hand in a mixing bowl. Cut apple, peach and nectarine into pea-sized pieces. Throw in the fruit pieces with raisins and chopped nuts. Sprinkle white sugar and brown sugar on top and mix well with a spoon/fork. Optionally, add a pinch of powdered edible camphor and mix again.
Leave it in the fridge (not freezer) for an hour or so to chill it.
