Benefit to rushing TH 8? I'm pretty darn along on my TH7, but I was thinking there would be a huge advantage to upgrade now and get that 3rd air defense. By upgrading my TH and just building that air defense, would it set me back that much?

The main issues with rushing are the loot bonus penalty (-50% on 2 TH levels below you) and matchmaking (more likely to be matched against similar TH levels). As soon as you upgrade to TH8, you will be attacked by TH9s regularly (they only get a -10% penalty for attacking you).
If you're done with walls or troops and feel bottlenecked to upgrading, I'd say go for it. I would never recommend rushing your army, though. They should be a similar or higher level than your defenses. You don't want to be lagging with either your farming or warring troops going into TH8.
I understand the sentiment. War (mass drag) at TH7 is ridiculous. I grew contempt for TH7 after warring there.
If you have the basics of a 3-star attack without just using drags, then I'd say go for it.
I just upgraded to TH8 as a fully maxed TH7.
It's really about your play style. There is more loot in silver league at TH8, but I am getting wrecked (losing 100-300k with a farming base) every time I log off. If you sit and attack for hours at a time, upgrading might be fun. But if you wanna raid 1-2 times a night and log, it's going to hurt more than it helps.
Well you would get reduced loot from th7s.
