Making a kanji logo, need help please

Hi guys,

I'm a graphic designer and i'm designing a logo for a sushi restaurant. I have the kanji symbol (pretty sure it's kanji) and I need it roughly but accurately sketched in a square box you see in the Japanese seals.

Top image is the example of how it will look, bottom is the actual characters I'm working with.
