Leveling in bloodborne [HELP]

I was wondering how do you guys level your characters in Bloodborne? Recently i created a character and i want him to use everything game has to offer yet i see that alot of people cap their characters at lvl 100 120 ? What am i supposed to do? Keep leveling him and keep playing? I know its weird question but... Tell me guys!
