Frustrating experience in a math education course

I am a preservice teacher currently enrolled in a math course designed to teach us how to teach elementary math, but I feel like I am not learning what I would like to learn in order to be a good math teacher. Our professor is a very kind person from what I can see, but most of the work assigned to us feels more like busy work rather than something I can actually learn from. When there is opportunity to learn from the text, it is clouded by all the hoops we have to jump through in order to prove we're doing the work. I don't mind some accountability, but if it's distracting me from my learning I can't help but feel a little resentful. To me it feels like all of my actual learning is coming from my field experience. Did anybody feel like this when they were student teaching? How did you get through a class like this?
