Why are white groups basically indistinguishable?

First off I apologize if this comes off as offensive, I really don't intend for it to be at all and if there's a better way I could ask it I'll edit it.

Like how you can differentiate between Chinese people, Japanese people, Korean people, etc. or people from Northern India and people from Southern India (there are words but I forgot them), or like Inuit vs Quechua vs native Hawaiians, and even different African groups but I can't really give examples by name besides the Khoisan cause I'm less familiar with them, but different European groups don't seem distinct at all? Like Asian people are Chinese, or Korean, or Mongolian, or Thai, or Japanese, or Northern Indian, etc. and they're all very distinct but you can't even reliably tell apart like a Spanish person and a Norwegian person despite one being Hispanic and the other being Scandinavian, or a French person and a Polish person despite one being (French? is there a bigger word?) and the other being Slavic, or an Irish person and a German person despite one being Celtic and the other being Germanic? Am I just totally wrong in this? Can you distinguish between white people like that and I'm just missing it?
