WWOOFing through eastern Europe?

My wife and I are currently undergrads and after our bachelor's degree, which we are currently half way done with, we would like to travel a bit. I would really love to see eastern Europe. We were thinking of going on a trip through Croatia, Serbia, Bulgaria, and Romania. I'm looking for any basic advice or recommendations to get started planning. When should I start planning?
