How do prestige levels work?

I'm probably just missing something, but how exactly do prestige levels work? I currently produce about 6 septillion cookies a second. I prestige with 1 million prestige levels and then when I get back up to about the same building count I might be at 10 septillion cookies. Shouldn't it be far greater then that? My over all prestige is 5.6 million.
