Is it possible to keep your day job (80-100 hours a week) and start a business?

I'm still learning the ropes, but lets say I have a few hours after work everyday (and one full day off) to work on a business. Will this even work? Because I thought you have to keep a close eye on operations constantly and eventually when it gets successful, your business will work itself and you'd have to rarely check on it.
