First success with breaded anything!

So my husband was diagnosed with celiac disease a year or so ago and I've tried many breaded chicken, fish, etc recipes without much luck. My father was nice enough to buy us the ATK "how can it be gluten free" books (1 & 2) and they are amazing! We tried their battered and fried cod - so good! I'm not normally a fan of fish, but wow. It was perfect. If you're struggling, I cannot recommend these books enough. I'm trying the dinner rolls out right now.

I just had to gush about this somewhere. I am so happy we finally have a batter recipe.
