3 day primary or full 2 weeks?

If I have checked the hydrometer readings and my beer is stable (1.009, checked 2 times, 24hrs apart ) after a few days, what is the point in waiting the full 2 weeks in primary that I often see recommended before bottling. I saw on brulosophy that he goes straight to crashing and fining then kegging only a few days after the SG is stable. So is there any good reason to wait (like bottle bombs?) or am I good to go?
