Nutrient Question

As I write my question, I feel like I have to qualify where I am at juicing-wise...

I've had Ulcerative Colitis for about 4 years now. Nightmare situation, but my journey has made stops through conventional medicine, ignoring the problem, straight juicing, long stretch of remission, revenge of the UC, naturopath and one last stop on the conventional medicine side for some closure. I take the troubleshooting approach to health and have used every encounter to my advantage.

Unfortunately I can’t eat vegetables. Almost like my body can’t digest them properly and every time, no matter what, I have issues. My UC is currently good and under control, but I have to stick with mostly soluble fiber foods and meat so my vitamin/mineral intake is suffering. Maybe you are thinking, just take a damn multi-vitamin! Wish I could. I’ve tried just about everything and going the easy way isn’t an option.

I have good gear - Omega NC800HDR and a Vitamix 650. I’ve been on 2 separate 30 day juice fasts, so I know what I am doing. For the longest time I was just blending with the Vitamix out of convenience, but lately I’ve had some issues even digesting that. So it has been about 4 months of no real fruit/vegetable intake. My UC is golden, but I know my body needs some damn nutrients.

Juicing is a real pain in the ass for me. Got 2 small kids and I work a shit ton. I know there are some bottling/storing juice haters out there, but I would make juice in batches, use citrus fruits, use a vacuum sealer and keep in the fridge. During my 30 day fasts I would make juice every 4th day. I was pretty hardcore with the process.

So all that being said, I am looking to be lazy, make juice for 3 days at a time and I don’t care how the juice tastes. I’m looking for the best concoction to provide my body with the largest range of vitamins & minerals. I thought about talking to a dietician or nutritionist, but then i have to meet with them, go over all the past bullshit, listen to their bullshit, etc.

I’m really hoping someone here knows what combination of fruits and vegetables will give me the largest range of vitamins and minerals.

Thanks!
