Sourdough Starter ???

Hey pals. I need a lot of help with a recipe I want to try. I'm trying to make Cato's Bread but the part about sourdough really confuses me. I've never baked bread before, and the concept of a starter is very new to me. How much starter should I add to the dough in this recipe? And what kind of store sells sourdough starter?
