Any Student Council teachers?

Hello r/teachers!

I am looking for resources or example lessons for teaching a Student Council class!

Last year, I taught only Freshman English. This year, I was asked to take on the role of Student Council teacher as well. It has been a decent year so far, but I won't deny the council lacks focus and organization and I need help. I'm looking for help with sample STUCO lesson plans and lesson ideas. I wasn't given any kind of support or training in the beginning. I was given an old binder from a different student leadership organization training from 2008. The woman who left the job burned a lot of bridges as she left. She allegedly had a ton of materials given to her but either scrapped them or took them with her.

My current council is in desperate need of triage so we can end the year happily and I'd like to start planning for next year.

I know in some schools STUCO is an after-school or during lunch activity. I am lucky enough to have it as an actual class.
