Has anyone done any formal(ish) cheesemaking education? What course(s) do you recommend? (xpost from r/cheesemaking)

Looking to do some more formal cheesemaking education, and I'm discovering that there are a surprising number of options!

I have heard good things about the Washington State University and CalPoly programs, and recently discovered the long-but-amazing-looking course at Sterling College in Vermont...and there's Academie Opus Caseus too...I can't commit to any full-season apprenticeships because I have a day job, but otherwise am flexible and want to hear your thoughts!

I'm North American-based but willing to travel pretty much anywhere, although English is my first and only language.
