SAN Software Options

I've just gotten in my fibre channel equipment, and am about to dive in setting up my new lab. Proxmox as my VM host, and I'm not entirely sure what to use for my SAN box. Some people have suggested straight Ubuntu, and I've been advised to avoid Openfiler. A quick Google search gives me conflicting information, and searching this subreddit is mostly people advising against building a SAN at all.

For the record, this is a Dell C2100 with 8 bays filled, 6 of which are storage drives. Two 120GB SSD's are set up as the boot drives, or will be. I've got a 4 port QLogic 4Gb FC card and QLogic SAN switch to go with it.

Anyone else gone far enough down the rabbit hole to build their own SAN? What did you use, how do you like it?
