Australian looking for help with immigrating

My partner and I are wanting to jump ship on Australia. She's 20 and I'm 23, she's a qualified realestate agent and I'm a qualified medical coder with 4 years experience in IT for telecom/marketing companies. We want to move there for a combination of the climate, living conditions and my partner's best friend (who is in Whistler).

We have 5 cats, 3-4 of which we would not leave behind and a lot of belongings, which may need selling. We enjoy camping/hiking, off-road driving but also a lot of online games/tech stuff. Partner is looking to eventually study dermatology and I dentistry, we are unsure of whether to start that here then move, or move, work 2 years, get permanent residency/citizenship and start there.

Will we need to learn french? What areas should we be looking at moving to? How is travel in Canada, is it feasible to visit the states by car/drive across the country? We're used to long drives, visiting her father takes 12-14 hours each way and that's only one state away here.

Is there anywhere particularly good for our job markets?
