Permit questions for remodel in AZ

My wife and I recently bought a great house that was built in 1958. My parents have a lot of experience remodeling and building homes. My dad is a retired engineer(not structural) and has drawn up a lot of plans in the past.

The house is a single story brick ranch. We would like to remove 2 walls(1 is load bearing) change the flooring, and update the interior electrical, and the kitchen cabinets. We plan on doing all of the work ourselves with lots of help from my parents and their friends(retired tradesmen).

Here is where things get tricky. Since all of the work is interior, my parents have said to skip getting permits. I have great confidence in their level of work. They recently completed a huge renovation in another state that passed inspection with flying colors. The plan my dad has drawn up for the beam to remove the walls looks very professional and overly strong. They are strict about doing all work to code for safety.

I am extremely torn about the permits. I am very worried that it will come back to haunt us when we go to sell(no sooner than 5 years from now).

If I just get permits for removing the walls, will the inspector go looking around for moved outlets and other things if I don't get a permit for them?

Should I just bite the bullet and get all the permits or will I probably be fine? I know no one can tell me for certain but I'm just looking for some advice. Thanks in advance!

EDIT: I went ahead and called my friend who is a general contractor. He set me up with an engineering/architect consultant who knows everyone in the permit office. There is no better way to describe him than a 72 year old cowboy(alligator boots, cowboy hat, ironed jeans, the works). He came out and went over the design with my dad and agreed it is very strong. For $500 he went down to the office, drew up the plans of the job and pulled the permit so we can start working right away! He also recommended pulling permits ourselves for the other stuff. His advice about what will and won't pass inspection was invaluable. It looks like we should be under $700 for all the permitting. That's cheap for the piece of mind it gives us. Thanks again for all the help and advice!
