Quality or dex build?

After trying out a lot of the weapons I decided I wanted to go with the lothric knight straight sword and the claymore for my first playthrough. I usually enjoy playing pure melee without casting. Can anyone tell me what build path would net me more damage? Going quality with a refined infusion or going dex with a sharp infusion on those weapons? Or should I invest in a totally different stat/infusion to get more damage out of the weapons?
