Advice on Vordt as pyromancer (also, no player signs anywhere?)

Hi all,

I spent ages trying to kill Vordt as a pyromancer, look at the video below to see what I mean... Any tips? I think I know the moveset but as a pyro, if I get hit just once I'm toast!

I'd prefer to use my soapstone to get a few more souls first ideally. However, I've not seen a single player sign yet. So on PC, what matchmaking settings are you all using to see the signs? FYI my NAT settings are open as well. So it's not that.
