Long-term API data collection

How (software/hardware/cloud VMs) would you collect months/years of data from an API that provides new state information every 60 seconds? My first thought was an application running in an Amazon AWS instance, however billing is per-hour and since the box is only needed for (at most) 1 second per minute, this approach involves a lot of wasted time/money. Second thought was a raspberry pi or arduino. Cheaper, but less fault tolerant/reliable. Thoughts?
