2015 STI - accessport data logging

I have 2015 STI base with 7000 miles on it which is bone stock at the moment. My Cobb access port is being delivered tomorrow. I purchased the accessport for a number of reasons but the biggest is for the data logging features. I have plans to go stage 2 or possibly stage 3 in the future and I am DETERMINED to do this the right way and to not blow up my engine.

So as of now my question is should I flash the stage 1 93 octane map immediately? I was considering leaving the stock map and simply logging for a while to see if there are any preexisting problems with knock or AFR or anything else. I bought the car slightly used and while the previous owner seemed like a responsible guy, who knows.

My second question is what type of data do you feel are most important? I am going to start with boost, AFR, fine knock learn but I would like to learn more about other important stats as well. Any info would be greatly appreciated or even a link to a good tutorial, my search have yielded conflicting results.
