Estus regeneration?

Occasionally I'll be running around and an orange mist would surround me, like receiving souls, and I would gain one estus flask. Can anyone tell me what causes this to happen? If I can cause this to happen for other players I'd love to know what to do. It has saved my ass more times than one!
