VL800 soft tail bobber

Hey looking at a 2001 Volusia VL800 for my first bike. I want to slowly turn it into a soft tail bobber but I'm not sure how the rear suspension works, I can't even really see it in pictures. If I want to cut off the rear fender mount will the shocks still be intact? And how will it look? Any help is appreciated.
