Since it took ten years for the clones to grow to maturity, why did the Republic bother ordering new clones in the middle of the war?

As far as I am aware, the clone wars only lasted three years, yet the clone labs on Kamino kept producing new clones. What purpose would these clones have served and what happened to them when the Empire came to power?
