Teach me the ways of DEX Meta

I am a soulsborne veteran but I only completed Dark Souls 3 once and left. Basically, I'm out of the loop on what's good in the game so I was hoping for reddit's guidance. I planned on making a dexterity focused character because I wanted to try out Bows. Also I make all my characters for PVP and I have an irrational fear of NG+
