I am hungry literally all of the time

One year ago exactly I became a vegetarian and joined a gym. Since then I have lost 75lbs and about 5 months ago I became vegan. Eating at a calorie deficit was easy as a vegetarian because I could just have two cups of greek yogurt and steamed vegetables for lunch and feel completely full until like 6 pm. But now, as the title suggest, I'm hungry all of the time and I don't know why.

Could it be what I eat for meals? Here's what I typically have:

Breakfast:

2 scoops vegan protein

3 cups Cashew Milk

5 strawberries

2 cups spinach

1/4 cup oats

Lunch:

Typically a small salad consisting of a cup of spinach, a cup of mixed greens, a cup of shredded carrots, and sun dried tomato dressing

2 cups of fruit (usually pineapple)

One clif bar

Dinner is the only inconsistent meal, sometimes I'll go out to grab some food or I'll have leftovers from some other night. Tonight for dinner I had 3 cups of rice with 2 servings of chickpea curry.

All of that is fine and good but between lunch and breakfast I have a Builder's Bar for a snack and one for when I get home.

I consumed about 2800 calories today and I'm still very hungry and I'm not sure why. I've been hovering at this weight for about a month and feel like I've hit a plateau and not sure what to do.
