Help! Great Cider – Unfortunate Side Effect

TL;DR at the end.

Last fall I made a 3 gal batch of hard cider using fresh apple cider that I purchased from an apple orchard. This cider turned out wonderful; great color, carbonation, and taste! The only problem was that about 20 or so hours after consuming said cider, it (how can I put this politely…) went through me with “great enthusiasm”. What happened?

Cider Pic

I don’t think the cider was spoiled. The diarrhea was brief and all was good afterwards. More like eating too much sauerkraut; once it’s gone it’s gone and all is well. It was unpleasant enough, however, that I didn’t share the cider with anyone.

I have made cider more that a dozen times and never had this effect. Please take a look at my process and suggest where I might have gone wrong and what I can do differently next time.

Process:

Day 1:

Purchase 4 gal of fresh UV pasteurized apple cider from the orchard.

Add 1 Campden tablet per/gal while at the orchard.

Day 2:

Add 4 tsp Yeast Nutrient

2.5 tsp Pectic Enzyme

1 tsp Acid Blend

Simple Syrup (4 C cane sugar & 2 C water)

Yeast: Nottingham Ale (Lallemand)

Specific Gravity: 1.065

Day 7: Rack to secondary (3 gal carboy w/airlock)

Day 14:

Rack to bulk aging (3 gal carboy w/airlock)

Add 1 oz Oak Chips (soaked for 30 min in ½ strength Metabisulfite)

Specific Gravity: 0.994

Day 75: Bottling day

Add Simple Syrup (1/2 C sugar & 1/4C water) Bottled into 22oz bottles sanitized with Star San.

A note on sanitation:
I use Potassium Metabisulfite (2oz sulfite/1gal water) for sanitation. Every pail, carboy, utensil and hose is wetted with sulfite before it touches any of the cider. The sulfite is never reused. My opinion is that I am pretty strict with sanitation. Its possible I am doing it wrong, however, I am very consistent.

Things that were different with this batch:

At bottling I used Star San for the first time.

Oak chips were added at bulk aging.

I used 22 oz bottles. This meant I drank ~20 oz at a time rather than ~10 oz. Could it be there was always a problem and I just didn’t notice until I was drinking more at one time?

Thanks in advance for comments and suggestions.

TL;DR I made a great cider last year, but unfortunately it caused brief diarrhea. Want to avoid this in the future. Help!
